New School Tuna Melt with Caramelized Onions and Swiss Cheese

It’s a classic! Who doesn’t love an old-school tuna melt?! We’re taking things to new heights with this simple yet tasty variation.
Ingredients
- 1 Tablespoon butter
- 1 Tablespoon olive oil
- 1 onion, sliced
- Salt and pepper
- 2 Tablespoons honey
- 2 Tablespoons mustard, yellow or stone ground
- 1, 5-ounce can of solid white albacore tuna, drained and chunked
- 1 Tablespoon mayo or Greek yogurt
- 1 English muffin
- 2 large slices of tomato
- 2 deli slices Swiss cheese
- 1 Tablespoon chives, finely sliced
Preparation
Preheat oven to 425 or broiler to high.
Place a medium skillet over medium heat, add butter and olive oil. Add the sliced onions, season with salt and pepper and cook for 20-25 minutes, stirring every now and then until caramelized. Set aside when caramelized.
While the onions are cooking, in a small bowl, mix together the honey and mustard and set aside.
In another small bowl mix the tuna with the mayo, just to bind it together, along with 1/4 cup worth of caramelized onions, and season with salt and pepper.
Slather both halves of the English muffin with honey mustard, a slice of tomato, a scoop of the tuna mixture and top with a piece of Swiss cheese.
Place on a baking sheet and put in the oven until the cheese is melted and the muffin is toasted. Remove from the oven and sprinkle with some chives.
Serves 1, makes 2 halves
